Tuna nigiri at a restaurant’s passgenerated image · draft

For restaurants

What changes in the kitchen.

You decide when to thaw and how much. You know in advance how many portions you get from a kilo. The same yield, every delivery.

Why it pays if you serve raw.

You don’t buy a different tuna every time. You buy the same result, every week.

ControlYou

Thaw only what you serve tonight. Your service doesn’t depend on the transport.

Consistency=

Monday, same as Sunday: same colour, same texture, same portions per kilo.

Waste0

No opened tuna waiting for the weekend. What you don’t use stays frozen, in its vacuum pack.

The routine

You thaw it when you need it.

Keep it frozen and thaw it only when you decide. Rinse, salted water, pat dry, cut, fridge: a simple protocol, the same every time.

Ready within a service.

Saku, 200-250 g50’

Sashimi, nigiri, carpaccio, tataki.

Chunk, 1.2-1.5 kg2h15’

Tartare, poke, maki.

The weight

What you weigh is what you serve.

Saku and Chunk are cut from the fish: the case weight varies slightly. No added water. You pay the actual weight, written on the delivery note: five kilos of tuna, not four of tuna and one of water.

What it costs.

Don’t think per kilo: think per portion. That’s where your food cost is decided.

The trial

Try your first case at no risk.

First order only, one case. If, stored at −20 °C and thawed following the protocol, the tuna doesn’t convince you, report it within 48 hours of delivery with photos and video: we replace it or refund you. Terms of sale, art. 8-bis.

Included with every batch

The menu text, already written.

Species, fishing area, gear: telling guests where the raw tuna on their plate comes from is an advantage. We write the line for you, for every batch.

The real questions.

How long does it keep once thawed?+
In the fridge at 0-4 °C, 4 days, as per the technical sheet. But you only thaw what you serve: the rest stays frozen in your freezer.
Why does the case weight vary?+
Because Saku and Chunk are cut from the fish, not moulded. We weigh every case and invoice the actual weight.
Does it work for every preparation?+
Yes: Saku for sashimi, nigiri, carpaccio, tataki and steak; Chunk for tartare, poke, maki and tagliata. Not just sushi.
Is there a minimum order?+
The minimum is one case. Clear prices in the shop, excluding VAT. Order without registering: you enter your VAT number at checkout.
